Through the "encouragement" of my good friend, Ann, I'll post some of my latest low-fat recipes I have discovered since beginning WW:
Spinach Artichoke Dippidy-Dip
1 1/2 cup of fat-free sour cream
1 1/2 cup of fat-free mayo
1/4 cup parmesan
1/4 cup scallions
2 jars of marinaded artichokes
1 package of frozen spinach
salt to taste, reduced-fat ritz crackers
(Mix all together and put in slow-cooker for 4 hours or bake in oven 35 min. Add cheese, almonds, and scallions on top if you want. Yum! Points value: 4 per 1/2 cup.)
Jalapeno Poppers
8 fresh Jalapenos
4 oz. low-fat cream cheese
1/2 cup shredded cheese (any kind)
1/4 cup parmesan
salt and pepper to taste
1 egg white, crushed corn flakes or crackers
(Cut in half and de-seed jalapenos...wear gloves! Mix cheese ingredients and put mixture in jalapeno halves, dip in egg white, then roll in crushed flakes. Bake till cheese is bubbly. These are stinkin' hot! Points value: 1 per popper.)
Allison's Homemade Hamburger Helper/Poor Man's Beef Stroganoff :)
1 lb. Extra Lean Ground Beef
3 cloves Garlic
1 small onion
1 can low-fat cream of mushroom soup
1 cup water
1/2 bag of yolk-free noodles
(Saute onions and minced garlic, add ground beef until brown, add a little salt and pepper to taste. Drain, put back in pan, add soup and water, mix and put stove on low. Simmer for about 10 min. to let it mesh together and boil noodles. Serve over noodles. Points value: 6 per serving.)
A low-fat chocolate fix: Get a cake mix, add a can of Diet Coke. Bake and add a dollap of cool whip. Points value: 3 per serving, 1/12 of the cake.
Okay, I can't believe I just did that. Enjoy!...and don't ever ask me to do that again. :)
